Wireless Temperature Recording System

CheckPoint is an automated, wireless, computerized remote temperature monitoring, recording and alert system to replace chart recorders, data loggers and manual temperature log reports. The software program is designed to meet HACCP, FDA, and health regulatory requirements. The system installs on an existing PC and comes complete with installation, training and support for a total quality solution.

Gate Gourmet is an international in-flight meal caterer with 115 flight kitchens at airports around the world producing over 534,000 meals per day. Food safety is high priority and under constant scrutiny by its own internal auditors and airline customers, and must provide documentation for unannounced inspections and the FDA inspectors. Gate Gourmet at the San Francisco airport has installed CheckPoint primarily to automate the temperature recording procedures and to enhance compliance to HACCP.

At the San Francisco airport kitchen facility, CheckPoint monitors over 10 refrigerated meal preparation and holding areas, as well as the refrigerated and freezer walk-in storage rooms.

Manual temperature logs for their six flight type dishwashers which are in heavy use 24/7 were very difficult to maintain, but are now constantly tracked by CheckPoint. The final rinse temperature during every use of the dishwasher is now recorded to show that the safe sanitization temperature of 180° F is reached.

The walk-in blast chiller is in constant use by the day and night shifts. Product Temperature Tracking probes provide full temperature documentation of the chill down of every product batch identified by meal name, job number, time and user.

On the PC, the cooks can view the food temperature inside the blast chiller and knows the moment the temperature of any food tray reaches the safe chill down target temperature of 41° F. At the end of each shift, the printed summary report shows the results of each chill down job.

Helmut Kopleck, the Executive Chef, relies on the data provided by CheckPoint to ensure the quality and safety of the thousands of meals delivered to the major airlines.
